We joined our friends at the Chiltern Brewery in Terrick, Buckinghamshire, for an exclusive sneak peek into the creation of their forthcoming beer, "Dear Mr Porter", a robust and flavourful Export Porter at 6.3% ABV.

The Craft Behind “Dear Mr Porter”

We step behind the scenes with David McGovern, Head Brewer at Chiltern Brewery to learn more about this special beer, set for release in October 2025. On our visit David provides insight into their brewing philosophy and heritage, sharing what makes the award winning brewery’s range of beers truly unique. From the initial concept to the final beer, every step a testament to their dedication to hyper local quality and British ingredients.

Learn more about Chiltern Brewery’s brewing process and their meticulously crafted hop and malt bill. In this video, we dive into the use of our speciality roasted and milled malts to produce a Porter with a rich character derived from French & Jupps Crystal Malt, Crystal 150, and Chocolate Malt, carefully selected to contribute to its deep colour, complex aroma, and satisfying taste profile, crucial in achieving the beer’s signature notes of roasted coffee, dark chocolate, and dried fruits with a hint of caramel sweetness.
